栄養士法の改正(平成14年4月1日施行)をうけて、管理栄養士養成校では新カリキュラムによる教育がスタートした。「臨地実習」については、学内で修得する知識・技術を栄養管理の実践の場に適用し、理論と実践を結び付けて理解できることをねらいとし、充実・強化が図られることとなった。そこで臨地実習教育に役立てることを目的に、山口県内における主要な病院を対象に管理栄養士の業務実態調査を実施した。アンケート結果から、「給食の運営」に関する業務は平均して89.7%実施されていたが、「給食経営管理」に関する業務は(以下、略)
